This is a great recipe - a really creative dish. I modified it a bit at the end: I added a bit of salt and pepper, 2 more tablespoons olive oil, and 2 tablespoons lemon juice. This is a recipe best served cold, so I would recommend making it ahead of time and letting it cool in the fridge before serving. I served it to friends the day after I made it, and we all agreed that it was a delicious couscous. I will definitely make it again!
